Menu Planning Monday: My Menu for the week of 2/21
For those of you who may be doing Weight Watchers , I have included the points per serving calculations for each of my recipes this week. used the "Recipe Builder" feature on the WeightWatchers.com e-Tools program to input all of the ingredients and calculate the points, so it should be pretty accurate.

Menu Plan Monday – Crazy Holiday Edition
Cottage Pie from All Recipes
Spinach Rolls from the incredible bread machine I just received as a gift.
I am running around like a chicken with its head cut off this week! Things always seem to get a little hairy before a holiday. Can you relate?

Wednesday Baking | Glazed Honey Pan Rolls
I found this recipe in a Quick Cooking magazine some years back. It was actually part of a bread machine feature, and I don’t own a bread machine ( I am the bread machine!). Happily, it’s pretty easy to modify this type of recipe for non-bread-machine use. You can find the original recipe on Taste of Home’s site , though, if you happen to be a bread machine person.

Saving Time & Money - Baking Bread
You can save money by baking your own bread at home. You can definitely save some time by using a bread maker. chose to make a small investment into a bread machine in order to save money (and time) in the long run. hinted to my husband that I wanted a bread maker and he bought me one for my birthday. I Wait, that's not right!

Menu Planning Monday
Monday - Pasta & Chicken Bake & Brocolli Tuesday - Meatloaf recipe (from my Penzey's catalog), mashed potatoes, veggies Wednesday - Crockpot potato Chowder from HERE , salad & homemade bread Thursday - French Dip, chips & fruit Friday - Spaghetti, bread, & veggies Saturday - Bread Machine Calzones from HERE - We made these recently and it was so much fun. I just made the dough in the bread machine, we rolled it out and everybody got to make their own, so they had just want the wanted. I haven't posted my menu for the last couple of week, because I didn't plan one.

Make Your Own at Home
I even had everything on hand, except fo the whip cream, but that was an easy fix. Our family likes the "big pretzels" from the mall. (That's what Dallin calls them.) I found a recipe HERE , and we make our own at home. They are super easy too, because I just throw all the ingredients in my bread machine to make the dough. Several summers ago, I found Jamba Juice for the first time. We lived in Utah, so the cool, fruity smoothies were perfect on a hot summer day.

“Do I need a stand mixer?”
Bread can most certainly be made(successfully, even!) Most of the recipes I post instruct you to combine the dry ingredients and then add hot liquids that are about 120 degrees. You should take a bit of the warm liquid(1/4 cup or so) and dissolve the yeast in that liquid first, and then you can proceed with the recipe.
For This question has been asked a lot lately, so perhaps a short post on that topic is in order.

Here's the recipe I'm trying this week: Country-Style Pork Loin Katie (Katiedid) from Taste of Home 1 boneless whole pork loin roast (3 pounds) 1/2 cup all-purpose flour 1 teaspoon onion powder 1 teaspoon ground mustard 2 tablespoons canola oil 2 cups chicken broth 1/4 cup cornstarch 1/4 cup cold water Hot mashed potatoes, optional Cut pork roast in half. This recipe was SOOOO yummy! Sunday - Bird's Eye Voila! meal from my Randall's trip this week - I had good intentions to cook a "real" meal today, but I'm just completely worn out and I stocked up on convenience foods this
