Gluten-free recipes do not have to be complicated. I do not enjoy recipes that involve so many different flours and techniques, so I keep it simple in the kitchen. Here is a round-up of some of my favorite gluten-free recipes that anyone can enjoy.
Southwestern Stuffed Spaghetti Squash – Spaghetti Squash is on sale this week at Giant Food Store for $.99/lb. Also, because this recipe is meatless, you are getting a great meal for little money.
Chocolate Chip Banana Nut Oat Flour Bread – This is an easy bread that only requires oat flour (grind up your own oats). Instead of adding bananas, you could use canned pumpkin to give it a different flavor.
Better-Than-Takeout Chicken Fried Rice – This recipe can be easily gluten-free by using gluten-free soy sauce. We eat this often because it’s filling and very tasty.
Creamy Chicken Enchilada Casserole – What makes this recipe gluten-free is the use of corn tortillas. Also, boneless skinless chicken breasts are on sale this week for $1.99/lb at ShopRite.
Gluten-Free Cream of Chicken Soup – So many casserole recipes call for cream of chicken soup. Here is an easy gluten-free version that tastes very good.
