Healthy Slow Cooker Beef and Cabbage Soup

The thing I like about making soups in a slow cooker is that you can quickly throw everything together in the morning and by dinner time you have a warm cooked ready-to-eat dinner. Healthy eating without fuss or spending hours in the kitchen!
This Slow Cooker Beef and Cabbage Soup is rich and hearty and healthy. I’m a big fan of leftovers, trust me when I say the complex flavor of this soup will taste even better the next day! So make it once, eat twice.
Healthy Slow Cooker Beef and Cabbage Soup
Ingredients
- 1 lb. of Ground Beef (85/15 or 90/10)

1 red onion diced

1/2 cup of diced celery
-
1/2 cup of diced carrot
-
1 tsp. of onion powder
-
1 tsp. of celery salt
-
2 tsp. of garlic powder
-
11/2 tsp. of dried oregano
-
1/2 tsp. of paprika
-
1 tsp. of salt
-
fresh cracked black pepper
-
two tablespoons of balsamic vinegar
-
1 cup of chopped mixed peppers
-
1/2 a small head of cabbage chopped
-
1 large sweet potato chopped in small chunks
-
1 14 oz. can of crushed tomatoes
-
1 14oz. can of fire roasted diced tomatoes
-
1 tablespoon of beef base
-
4-6 cups of beef broth
-
1 bag of frozen mixed veggies( I like carrots, peas, corn, and green beans)
Directions:
Step 1 – Brown ground beef and put in crock pot.
Step 2 – Add a little oil if needed to the same pan and sauté onions, celery, and carrots with all seasonings until vinegar.
Step 3 – When the vegetables are browning and fragrant add vinegar. If the vegetables start to stick, add a little broth and cook until it is reduced.
Step 4 – Add in peppers.
Step 5 – Cook until the peppers are soft and add to the crockpot.
Step 6 – Add remaining ingredients through broth to crock pot and mix together.
Step 7 – Cook on low for 7-8 hrs. or on high for 4 hours. If you are cooking on high, I suggest boiling the cabbage for a few minutes in broth prior to adding to the crockpot.
Step 8 – Add in frozen veggies and cook for an additional 10 minutes or until veggies are cooked. Add extra salt and pepper to taste.

WOW!! Just tried this soup and am in love. I can’t believe how flavorful it is! One note of caution to future cooks — Beware of overloading your crockpot. I was a bit too generous on the amounts of veggies I put in and almost had to cut the last few ingredients. Either make sure you stick to the recipe quantity-wise or use a bigger crockpot.

What is beef base? Can I just ommit that, pretty sure that isn’t legal for me to have on GAPS. I just want to make sure it won’t have a huge effect on the final outcome. Thanks

I live alone but this looks amazing. Would leftovers be freezer safe? Or would that ruin the vegetables after thawed?

You can skip the balsamic and just use a little apple cider vinegar or a little worcestershire sauce. Its just to deepen the flavor and caramelize the veggies a little more.

So is it worth it for me to go out and buy balsamic vinegar if I don’t have it on hand? Could you substitute apple cider vinegar or something? Or just leave that out? Or use water in its place? Never used balsamic vinegar before so I don’t know what it’s like.

It just means add all seasonings up to the vinegar. The vinegar is added in the next step. And yes, you can make it without the peppers!
