I know with school starting that many parents are looking for an easier way to get dinner on the table on busy school nights. On those nights your crock-pot is going to be your best friend!

To save even more time, you can assemble the crock-pot meals ahead of time and freeze. Then just pour the ingredients into your crock-pot in the morning – dinner is ready with only 1-2 minutes of hands-on time!

I opted to purchase the plan that included the assembly videos and I am SO glad I did! It was incredibly helpful to be able to see how Erin assembled everything. She had several great time-saving tips in the videos too.

My cost ended up being a little bit higher (still under $200) because my Costco did not carry the sweet potatoes, so I purchased organic sweet potatoes from Kroger. I also opted to purchase the organic chicken from Costco, which increased my cost quite a bit, but I also used my own homemade chicken broth (essentially free) which helped to offset some of my additional cost.

Also, Erin must be super-human because it took me closer to 4.5 hours to make the meals. That time does include clean-up though. That works out to only 13.5 minutes per meal – still a HUGE time-saver!

I’m so excited to have an entire month’s worth of weeknight dinners in my freezer, ready to go! Now I can have dinner prepared in just 2 minutes on those crazy busy days!
