Easy Game Day Potato Skins
Here is a clever snack idea you can make for any occasion! Check out these super easy game day potato skins! Not only are they easy to make, they are packed with amazing flavor! These skins are the perfect finger food!
Here’s what you will need:
- 3 medium potatoes
- Vegetable oil
- 5 bacon slices
- 1 1/4 cups grated sharp cheddar cheese
- 1 1/4 cups grated Monterey Jack cheese
- 1 tablespoon chopped fresh parsley
- 1/4 teaspoon cayenne pepper
- 3/4 cup chopped green onions
- Sour cream
- Salsa (optional)
Preheat oven to 425°F. Be sure to scrub your potatoes and pat dry. Rub skins well with oil. Place potatoes on baking sheet and bake until potatoes are tender. Should be about 1 hour. Cool and maintain oven temperature. Cut each potato lengthwise in half. Scoop out centers, making sure to leave 1/2-inch-thick layer of cooked potato on skins. Oil baking sheets well. Place the potato skins, skin side down on the baking sheet, spacing them about 1 inch apart. Sprinkle with salt and pepper.
Cook bacon over medium heat until brown and crisp. Drain and chop bacon into tiny pieces. Transfer to a medium bowl. Add cheeses, parsley and cayenne pepper, stir to blend. Sprinkle cheese mixture on top of the skins. Bake until skins are crisp and cheese mixture melts. Should be about 25 minutes or so.
Transfer the potato skins to serving platter. Sprinkle with green onions and top with spoon of sour cream. Serve and enjoy!
