Super Easy Game Day Potato Skins

Homemade Potato Skins are an absolute favorite when it comes to appetizers in our house. Crispy baked potato skins with cheese, what’s not to love about that?
These skins are the perfect finger food! Make this easy appetizer for your next party!
Ingredients:
- 3 medium potatoes
- Vegetable oil
- 5 bacon slices
- 1 1/4 cups grated sharp cheddar cheese
- 1 1/4 cups grated Monterey Jack cheese
- 1 tablespoon chopped fresh parsley
- 1/4 teaspoon cayenne pepper
- 3/4 cup chopped green onions
- Sour cream
- Salsa (optional)
Directions:
1. Preheat oven to 425°F.
2. Be sure to scrub your potatoes and pat them dry. Rub skins well with oil.
3. Place potatoes on a baking sheet and bake until potatoes are tender. Should be about 1 hour. Cool and maintain oven temperature.
4. Cut each potato lengthwise in half. Scoop out centers, making sure to leave a 1/2-inch-thick layer of cooked potato on the skins.
5. Oil baking sheets well. Place the potato skins, skin side down on the baking sheet, spacing them about 1 inch apart.
6. Sprinkle with salt and pepper.
7. Cook bacon over medium heat until brown and crisp. Drain and chop bacon into tiny pieces. Transfer to a medium bowl.
8. Add cheese, parsley, and cayenne pepper, and stir to blend.
9. Sprinkle cheese mixture on top of the skins.
10. Bake until the skins are crisp and the cheese mixture melts. Should be about 25 minutes or so.
11. Transfer the potato skins to a serving platter.
12. Sprinkle with green onions and top with a spoon of sour cream. Serve and enjoy!
