Gluten Free Chocolate Cherry Almond Cookies
1 1/4 cups of almond flour or meal
1/2 cup of brown sugar
1/2 tsp of baking powder
1/4 tsp of salt
3 tbls. of almond butter ( I used creamy.)
1 tsp. of vanilla extract
1 large egg (Use a flax egg to make vegan.)
1/2 cup of chocolate chunks (I used enjoy life. They are gf and vegan.)
1/4 cup of dried cherries
1. Mix together dry ingredients in a bowl.
2. In another bowl, beat the egg until it starts to look frothy. Mix in vanilla.
3. Mix wet ingredients into dry just until combined.
4. Mix in chocolate and cherries.
5. Refrigerate for at least an hour.
6. Shape a heaping tablespoon of chilled dough into a ball, place them all on a parchment lined baking sheet, and flatten slightly.
7. Bake for 10-12 minutes or until the edges are browned.
8. Cool on a wire rack.
