Daily Frugal Tip: A Freezer-Friendly Recipe!

When we were talking about freezer cooking last week, Angie sent in a great frugal freezer cooking recipe! Here’s what she suggested:

“I have been making a lot of homemade frozen foods lately. This one is so simple, great for many different dishes, and it is SOOO delicious! You don’t need to measure anything – just do it to your liking!

Chicken Lime Filling:

  • 1 Rotisserie Chicken, shredded
  • Cumin to taste
  • Garlic or Garlic Powder to taste
  • Cayenne Pepper to taste
  • Juice of 2 Limes (or however much you prefer)
  • 1 can Black Beans, drained and rinsed
  • 1 can Corn, drained
  • 1/4 cup Shredded Cheese, your choice (optional)

Combine all ingredients to your taste. Can be used for tacos, on salads, or nachos. My favorite way to use it is by layering a little bit of cheese and filling on a tortilla (sandwich filling in between 2 layers of cheese). Cook on medium heat until the tortilla is browned and cheese is melted. Let cool to room temperature, wrap in parchment or waxed paper, and freeze! Great for an easy snack, quick dinner, or lunch for work! The filling can also be frozen in an airtight container for approximately 1 month. Bon Appetite!”

  1. Good post! I no longer do that because we’re empty nesters now, but I DO freeze produce (especially from ALDI because ALDI’s has incredible sales on bell peppers, onions, mushrooms, etc.. I chop the onions and peppers first so that I can scoop only what I need for recipes. Hint: After washing the mushrooms, blanch in boiling salt water before freezing in bags or containers.

  2. Whenever I make a casserole, burritos, chili, soup, etc – things that will freeze well, I only bake half of the dish and freeze the other half. That way I always have things prepared and ready to cook. You have to allow for thawing time, but for two weeks worth of meals that I plan out when I shop, half of those meals are already prepared in the freezer. Saves money and time!
