Chocolate Chip Coconut Pudding Cookies
I love pudding cookies, but I have never seen a chocolate coconut version. So, I decided to try the combo and they are delicious! The rich chocolate and sweet coconut blend so well with the soft chewiness of a pudding cookie. Enjoy!

Chocolate Chip Coconut Pudding Cookies
- 1 cup of unsalted butter (room temperature)
- 3/4 cup of dark brown sugar
- 1/4 cup of granulated sugar
- 1(3.4oz.) package of coconut cream pudding mix
- 2 large eggs
- 1 teaspoon of vanilla extract
- 1 teaspoon of coconut flavoring
- 2 and a 1/2 cups of All Purpose Flour
- 1 tsp. of Baking Soda
- 1/2 tsp. of salt
- 1 and 1/2 cups of chocolate chips
- 1/4 cup of shredded coconut
- For Topping:
- 1/4 cup of good quality chocolate
- small amount of shredded coconut for sprinkling
Directions
Preheat oven to 350 and line cookie sheets with parchment paper
1. Cream together butter and sugar
2. Mix in pudding mix, eggs, vanilla flavor, and coconut flavor
3. Whisk together flour baking soda, salt, and shredded coconut in a bowl
4. Mix dry into wet ingredients just until combined
5. Mix in chocolate chips by hand
6. Shape dough into balls and slightly flatten
7. Bake 10 minutes or until golden
8. Let cool on a rack
9. Melt chocolate in a double boiler
10. Drizzle chocolate over cookies and sprinkle with leftover coconut
