There are nights that I want some comfort food in a hurry! This is a delicious one pan dish that will satisfy the entire family. They won’t even notice the spinach in it! The sour cream gives the whole dish a nice creaminess and I am a sucker for sun dried tomatoes. Garnish with a little parmesan cheese and serve with a green salad and dinner is done.

One Pan Sun Dried Tomato Chicken Pasta
- 3 boneless full chicken breasts cut into cubes
- 1 tsp. of dried thyme
- 1 tsp. of onion powder
- 1 tsp. of garlic salt
- fresh cracked black pepper
- 1 tbls. of butter
- 1 tsp. of olive oil
- 1 red onion chopped
- 1/4 cup of chopped sun dried tomatoes in oil
- 1 tbls. of balsamic vinegar
- 1 tsp. of garlic salt
- 4 good handfuls of raw spinach
- 2 cups of chicken broth plus 1/4 cup if needed
- 8 oz. of short pasta (I used Mafalda)
- 1 cup of sour cream
- salt and pepper to taste
- garnish with parmesan cheese
1. Heat a heavy bottomed pan on medium high heat. ( I used a low dutch oven.)
2. Toss seasonings with chicken and a little oil. Add oil and butter to pan. Cook chicken until browned on all sides. Set chicken aside.
3. Reduce heat to medium. Add onion and sun dried tomatoes to pan and garlic salt.
4. Saute until onions start to soften and add balsamic.
5. Add spinach and cook until spinach is wilted.
6. Add chicken back in, pasta, and chicken broth. Mix together and cover pan.
7. Simmer pasta mixture until pasta is soft.
8. Check liquid while cooking. If you need to, add some more chicken broth.
9. When pasta is soft, remove lid. If there is still a good amount of liquid, simmer until it is reduced and slightly thickened.
10. Turn off burner and mix in sour cream.
11. Season to taste and garnish with Parmesan cheese!
