I love old fashioned broccoli casserole with lots of cheddar cheese, Ritz crackers and all the extra butter and fat.
However I no longer purchase
and I'm lactose intolerant. I also don't eat Ritz crackers anymore so I came up with a low calorie way to still have a version of the old standby.
Boil 2 large bunches of fresh broccoli (you could use frozen) until tender
Mix in Mrs. Dash to avoid salt to taste
Once tender, drain the broccoli and add in 2 cups of feta or goat cheese
Stir
The heat will melt the feta into a creamy texture that will create the old casserole feel you love without calories.
