Bourbon Chicken with Broccoli

This recipe has been on my menu posts multiple times, and you all have asked for the recipe more than once. I found the recipe in a Cook’s Country magazine some years ago, and I haven’t tweaked it much except that I add broccoli into mine, so then it’s a one-dish meal (rice, chicken, and broccoli).

I made a double recipe of the dressing from this strawberry-pear salad , put it into a jar in my fridge, and then shook it up each morning and poured a little over some over greens. Tuesday I used leftover chicken to make half of this chicken and biscuits recipe. Halving it worked great for just the two of us!

I didn’t really measure anything; I used two carrots, an onion, two stalks of celery, a healthy shake of thyme, some salt and pepper, and then of course the chicken broth and the leftover chicken.

I made an eyeballed* approximation of the cilantro/lime dipping sauce that is in this chipotle chicken recipe to use as a dressing, and I fried some corn tortillas to make some crispy tortilla strips. *It It was an evening full of eye-balling. I feel like eyeballing is more feasible when you are making small quantities of things.

This is the method I always use (and it IS more of a method than a recipe! I made chicken broth from two rotisserie chicken carcasses I had two chicken’s worth of bones in my chest freezer, and on Sunday I took them out and made a little batch of chicken broth. I don’t usually measure anything for my broth.)
