Fresh Zucchini Relish

Now is a good time for some canning of all those veggies and fruits you got out of your gardens (or friend's gardens).

We made a fresh Zucchini relish (recipes all over online). Every time we do this, we think we've made enough to last all Winter long, but we end up eating it (and sharing) in about a month. Oh well...
