I am so ready for fall. Tonight I decided to whip up some pumpkin cupcakes with cream cheese icing. They are divine.This recipe was inspired by the Joy of Baking. I did change up a few of the spices and quantities. I also used my own icing recipe – I like it extra cream cheesey and sweet!
So here we go:

Pumpkin Cupcakes with Cream Cheese Icing
Pumpkin Cupcakes
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, room temperature
- 1 cup granulated white sugar
- 2 large eggs
- 1 1/2 teaspoon pure vanilla extract
- 1 cup canned pumpkin (pack it in the cup solid)
Cream Cheese Icing
- 1 block of cream cheese ( i like mine very cream cheesy, use about 4 ozs if you like less cream taste)
- 2 tablespoons unsalted butter, room temperature
- 1 teaspoon vanilla extract
- 2 cups powdered confectioners sugar (use less if you don’t like it really sweet – you can always add more)
Garnish
- Mix a small amount of sugar and cinnamon in bowl , sprinkle lightly on top of icing.
Preheat oven to 350 degrees F.
Cupcakes
In a large bowl, sift together the flour, baking soda, spices, and salt.
In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add in the vanilla extract. Mix in the sides of the bowl. With the mixer on low speed, alternately add the flour mixture and pumpkin puree, in three additions, beginning and ending with the flour mixture.
Fill 12 muffin cups evenly with the batter using two spoons. Place in the oven and bake for about 18 – 20 minutes, or until firm to the touch and a toothpick inserted in the center of one of the cupcakes comes out clean. Place on a wire rack to cool. Do not frost until cool.
Icing
In a large bowl, beat together the butter and cream cheese with an electric mixer. With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy. Beat in the vanilla extract. Beat until desired consistency.
Sprinkle cupcakes with garnish and let icing set.
Enjoy!

I am totally going to make it but I was wondering about the Philly cooking cream. I have some regular flavored ones frozen and I was thinking that I should be able to use them instead. Do you have any ideas what on the recipe I would have to change since it isn’t the normal solid block??? These look yummy and I think that I am going to make them this weekend!!!

I wish that I got them baked this weekend but it turned into a yucky cleaning weekend instead of a yummy baking weekend :( I am hoping to try to make some this week and I will let you know. I figure that if it is too loose then I add more powdered sugar. I will have so much icing that I might have to make a double batch of muffins :)

Okay, just got the cupcakes out of the oven and my son and husband have already gone through 4 before they even cooled. I might have eaten some too. I don’t know if we are going to even get to the frosting before they are gone!!! I did take out pumpkin cream cheese to make some but I think that I better make another batch of cupcakes first. Thanks for the great recipe. My husband said it is way better then mine. I told him that mine was pumpkin bread and this was a cupcake :) Of well, I guess I found the new favorite in this house. Thanks for the recipe – I just happened to have a lot of extra pumpkin in the cupboards and have been wondering what to do with them. This was the perfect answer. I made a batch tonight and they came out perfect! I made a pan of mini-cupcakes as well as regular sized ones and my kids were so thrilled.

Great minds think alike.. I made Pumpkin w/ chocolate chip muffins today!!! I had pumpkin I froze from last years pumpkin, I thought I’d use up before we start thinking about this years pumpkin!!! they are fantastic and freeze well!!! here’s the recipe I use, ( but I only used 1 1/2 c of sugar, the full 2 c is really sweet).

My husband would fall in love with me all over again if I made these for him. He LOVES pumpkin roll, but when I’ve used his family’s recipe for it, he always tells me that it will never taste as good as when his grandmother made it…..sigh. I could get a similar taste with these, but have it something different, so it would be my thing. I will definitely have to try this.

I actually tried the Pumpkin Roll off of All reciepes last fall and it turned out so awesome, and I’m no master in the kitchen by any means. I also did not have cheese cloth so I used a burp rag and it still tasted great.
