I had the idea for a tomato dressing after seeing videos of pan con tomate , which translates to “bread with tomato.” ” It’s a Spanish dish of grated tomato on toasted bread with good olive oil drizzled over the top and a little salt. It’s absolute perfection! Extra-virgin olive oil.

Chips rarely go stale in our house, but when I found that nearly a whole bag of my favorite Trader Joes’s baked chips had gone stale, I was instantly bummed (there’s not much you can do to repurpose stale chips). I instantly thought of microwaving them, as I’ve revived old bread this way many times.

whipped up an easy pumpkin spice bread that Rosie had been craving for her to enjoy for breakfast. Doing this stretches the sweeter elements of the trail mix without adding extra sugar (which I'm always trying to keep at a minimum).also also tried my hand at making butter in the food processor from a wonderful recipe I found HERE.

The most common way to eat pesto is on a hot crusty bread or pasta. I buy my basil at the farmer’s marker or Trader Joe’s, so it’s very affordable. Not to mention, jarred pesto is a completely different food in my opinion. It lacks freshness, which is what I love so much about it. I also use it as a seasoning.

I used the Trader Joe’s roasted corn because it adds so much flavor, and it’s just one of my favorite ingredients. Taste, season with salt and pepper, and serve with hot crusty bread or crackers.
