Instant Pot® Garlic Mashed Red Potatoes
This is a quick recipe for buttery, creamy garlicky Easy Instant Pot Garlic Mashed Red potatoes. This recipe will give restaurant-quality mashed potatoes in the comfort of your home in a fraction of the time.
Mashed potatoes are a favorite comfort food in our family. But I find the time it takes for the water to boil and cook the potatoes the most time-consuming part. That’s why I love this Instant Pot Garlic Mashed Red Potatoes recipe.
Red potatoes have more moisture and less starch, which is why they are great for mashing as they are naturally creamy and smooth.
Ingredients:
- 3 lbs. red potatoes, cut into small chunks
- 5-6 garlic cloves, smashed and peeled
- ½ c. chicken or vegetable broth, preferably organic
- Sea salt and black pepper, to taste
- ¼ c. heavy cream
- 3 T. unsalted butter, cut into chunks
Directions:
1. Combine potatoes, garlic and broth in Instant Pot®.
2. Season with salt and black pepper, to taste, and stir to combine.
3. Add lid and lock into place. Switch the vent to “Sealing” and set the “Manual” setting to 8 minutes.
4. When cook time is complete, allow pressure to release naturally for 10 minutes, then manually release any remaining pressure.
5. Carefully remove lid and add heavy cream and butter.
6. Mash the potatoes with a potato masher or immersion blender until almost smooth, but still slightly chunky. Taste and season with additional salt and black pepper, if desired.
7. Transfer to a serving bowl and serve immediately. Enjoy!
