Chicken, Corn, Kale Soup | Use Up Leftover Chicken!

Everyone in my family loves soup, which is awesome considering it is budget friendly, good for you, easy, and a great way to use up leftovers! I threw together this quickie soup last night using leftover chicken and kale! Ingredients: 2 cups leftover chicken. Bring to a simmer and let cook for about 20 or until the kale is tender. We ate ours with some leftover blue corn tortilla chips, sour cream, and a little Monterey jack cheese, but this is totally optional!
