What We Ate Saturday My friend Mia and I cooked together; she made some fried plantains, and I made chorizo and potato tostadas, topped with cilantro, queso fresco, and Mexican crema. Tuesday I got out some leftover Christmas ham from the freezer and Zoe and I ate that with some baked apples, plus some leftover rolls.

My main goal is to mostly cook at home, and other than that, I’m not stressing for now. Next time I’d cook the chicken, put it to the side, and add it at the very last minute, once the sauce was cooked. My lunch leftovers were at least 25% better than the original dish. What did you have for dinner this week?

What We Ate Saturday Leftover chicken noodle soup , and I again added cream to mine. Also, I took the suggestion from one of you and added my leftover tortellini to the soup. I eyeball a lot more now that I’m just cooking for two! Wednesday Leftover chili. And maybe I will eat up some random leftovers.

Tuesday I used leftover chicken to make half of this chicken and biscuits recipe. Wednesday We had enough leftovers to make cooking unnecessary, which was handy because I had an evening lab (Where we learned all about how to insert catheters and administer enemas. Halving it worked great for just the two of us!

Then I stirred in the cooked couscous along with some red pesto from Aldi, and topped it with the last of a bag of mozzarella from the freezer. Tuesday I sauteed some ham from the freezer, then sauteed some chopped kale, then added in leftover mac and cheese plus some milk and cream. What did you have for dinner this week?
