I’ll eat leftovers for days before I’ll throw them away and re-use everything I can. Chips rarely go stale in our house, so I was pretty bummed when I found that a whole bag of my favorite Trader Joe’s baked chips had gone stale. After four or five times in the microwave, they were as good as new.

You can find the mini potatoes at most grocery stores, but we like the Potato Medley at Trader Joe’s. It’s the perfect amount for my husband and I, and his lunch the next day (he loves bringing leftovers for lunch)! I do this right on the baking sheet I’m going to cook them on.
