Caramel Snicker Doodles Recipe
These cookies are a little work, but they are worth every minute!! The cinnamon sugar cookie blends perfectly with the gooey vanilla caramel. If you don’t have time to make caramels, just cut store bought caramels in half and roll them into balls. They taste awesome with a steamy cup of chai or coffee!

Caramel Stuffed Snickerdoodles
Cookie Dough Ingredients:
- 1 cup of unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 3.4 oz package of vanilla pudding mix
- 2 large eggs
- 1 tsp. of vanilla extract
- 2 1/4 cups of AP Flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp cinnamon
Sugar & Cinnamon Ingredients:
- 1/4 cup of sugar 2 tsp of cinnamon in a bowl.
Sugar & Cinnamon Instructions:
- 1. Cream butter and sugar in a mixer.
- 2. Add eggs, pudding, and vanilla to sugar mixture. Mix together.
- 3. Whisk together dry ingredients.
- 4. Mix dry ingredients into wet ingredients just until combined.
- 5. Chill dough until ready to assemble.
Caramels Ingredients:
- 1 cup of brown sugar
- 1/2 cup heaving whipping cream
- 4 tablespoons butter
- 1/4 tsp salt
- 1 tablespoon vanilla extract
Caramels Instructions:
- 1. Melt sugar and butter in a heavy bottomed pan on medium heat.
- 2. Whisk in cream.
- 3. Whisk until mixture reaches a boil, add vanilla.
- 4. Continue cooking sugar until a candy thermometer reaches 240 degrees F.
- 5. Mix in salt.
- 6. Pour into a parchment lined and greased 9 by 13 pan.
- 7. Chill until set.
Cookie Assembly Instructions:
- 1. Roll dough into 1 tablespoon balls.
- 2. Roll caramel into large pea size balls.
- 3. Cut dough balls in half and press caramel in the center. Roll back into a ball.
- 4. Roll dough balls in cinnamon sugar.
- 5. Freeze dough balls for 2 hours prior to baking.
Baking Instructions:
- preheat oven to 350
- Bake for 15-18 minutes or until cookies start to color on the edges.
