How to make a lower calorie version of Rainforest Cafe's $14 Volcano dessert at home

Before you panic, I know this is an overpriced place to eat.  We were able to keep it reasonable, as much as you can at that place.   Anyway, this was a first time visit for our kids.  They liked it but were more enamored with the volcano dessert.

If you haven't seen this monstrosity it's pretty big and expensive, $13.99 plus tax.   They begged and pleaded to get one but we convinced them to drop it with a promise that I would create one at home.

So I did, tonight.

Did you know there are more than 2,500 calories in the restaurant version of the Volcano?  It's made with brownies, hot fudge sauce and around five scoops of ice cream in the center.

The brownies are around 8 inches long each.  That's a lot of food for even a family of five to split.  That's 500 calories per person.

Tonight I treated the kids to a version of the indulgent treat, mama style.  Instead of the thick brownies I covered four graham crackers in chocolate and let them dry.  In a plastic dish I made a circle of sugar free hot fudge syrup.  Dropped four scoops of low-fat ice cream in the center.  Then balanced the four crackers around the tower of ice cream.  Then drizzled more chocolate sauce around the top.

I couldn't find a candle to save my life, so I lit a skewer and the kids were happy!

It was delicious, while still full of calories, hopefully my substitutions helped save the calorie count.
