Reader submitted recipe: Fig Upside Down Cake by Yuri Pineda

A follower, Yuri Pineda shared pictures and recipe for a fig upside down cake.  It looks delicious.

Her directions:

Ingredients:

2 sticks of butter or margarine

1/2 c. of sugar beat till it's light and fluffy.

Add 4 eggs one at a time and mix.

Add 2 tsp of almond extract

1/2 tsp of vanilla extract.

Then add 2 c. of flour,

2 tsp baking powder,

1 tsp of baking soda and 1/2 tsp salt

Alternate the flour mixture with 3/4 c. milk. Bake it a 350 for 40 min and let it cool down before you serve.

Add the figs at the bottom of the cake pan and pour your batter second. I cooked the figs till they turned syrupy with their own juice.
