Black Bean & Quinoa Salad Recipe
INGREDIENTS
- 1 cup fresh or frozen corn kernels
- 1 can (15 oz.) black beans, rinsed and drained
- 1 cup cooked quinoa (I used red to give it some color)
- 1 avocado, chopped
- 1/2 cup chopped red onion
- 1/2 cup chopped fresh cilantro
- 1/4 cup Hellmann’s® or Best Foods® Vegan Carefully Crafted Dressing and Sandwich Spread
- 1 Tbsp. fresh lime juice
- 1/2 tsp. hot pepper sauce
DIRECTIONS
- Cook corn in large nonstick skillet over medium-high heat, stirring occasionally, until lightly toasted, about 3 minutes.
- Combine corn with remaining ingredients in large bowl. Serve chilled or at room temperature.
