Oven-Roasted Asparagus
This Simple Oven-Roasted Asparagus recipe is super quick to prep and roasting removes any bitterness.
This really simple recipe is the perfect vegetarian side you need that can go from refrigerator to table in 16 minutes or less. Roasted asparagus pairs perfectly with the roast leg of lamb or grilled fish.
I don’t know about you, but I can eat cold out of the fridge oven-roasted asparagus too.
Asparagus is considered protein-rich in the vegetable world. Just 100 grams of the green stuff contains 2.4 grams of protein. It is also an excellent source of vitamin K and folate, and a good source of vitamin A, vitamin C, riboflavin, and thiamin.
Ingredients:
- 1 lbs. fresh asparagus, trimmed
2 T. extra virgin olive oil
Sea salt & black pepper, to taste
Directions:
1. Place the top oven rack in the center position and preheat oven to 425°F. Line a large, rimmed baking sheet with parchment paper or a Silpat® baking mat.
2. Spread the trimmed asparagus onto the prepared baking sheet and drizzle with the olive oil.
3. Season with salt and black pepper, to taste, and gently toss to combine. When asparagus is evenly coated, spread into a single layer without overcrowding.
4. Place baking sheet into the pre-heated oven and roast for 8-10 minutes, or until crisp tender. Turn the asparagus once while roasting.
5. Remove from oven and serve immediately. Enjoy!
*Tip: Actual cook time will depend on the thickness of the asparagus and desired consistency. Check after 6 minutes and adjust cook time.
