Everyone loves an easy and inexpensive slow cooker meal and this one doesn’t disappoint. This is an easy weeknight meal with tons of flavor! The rice adds a nice kick of citrus to the dish. I could eat a bowl of the rice all on its own. Try this instead on taco night! You can also use leftover chicken to stuff enchiladas for another meal with a nice salsa verde.

Slow Cooker Cumin Chicken with Cilantro Lime Rice
6 skinless/boneless chicken thighs
1 and a half tsp. of ground cumin
1/2 tsp. of chili powder
1/2 tsp. of ground cayenne
1 tsp. of salt
1 tsp. of garlic powder
1 tsp. of onion powder
1 14oz. can of roasted tomatoes
2 cups of chicken broth
1 15oz. can of black beans
1 cup of corn
1. Cut chicken up into chunks and dump into slow cooker. (If you only have bone in, you can put them in whole. Just remove the skin.)
2. Sprinkle seasoning over chicken.
3. Top chicken with tomatoes and broth.
4. Cook on high for four hours or on low for 8.
5. Pull chicken apart with tongs or fork. (Remove bones if using bone in thighs.)
6. Mix in rinsed black beans and corn.
7. Replace lid and cook for 30 more minutes.
8. During that last 30 minutes, cook cilantro lime rice.
Cilantro Lime Rice
Quick Rice White or Brown
Chicken Broth
1 lime
Small bunch of Cilantro
Salt to taste
1.Prepare 6 servings of either white or brown rice with chicken broth for flavor, according to directions.
2. Grate the rind of one lime into rice.
3. Squeeze in the juice from one lime.
4. Chop up cilantro and add to rice.
5. Mix together and taste. Add salt if needed!

Made this recipe on a whim for my family last night, and it was fantastic! We couldn’t get enough of it! The rice by itself is wonderful. I will be making it to go along with other meals in the future. and the cumin chicken was so easy & FULL of flavor. A big hit here at my house with 2 adults & 3 youngsters. I highly recommend this recipe!
