Quick and Easy Baked Salmon en Papilotte with Fresh Herbs and Capers
Cooking salmon en papillote ensures the salmon is nicely marinated and doesn’t dry out. This Quick and Easy Baked Salmon en Papilotte with Fresh Herbs and Capers will be your go-to recipe for quick weeknight meals. I love Salmon, if I had to choose one animal protein to live on it would be Salmon.
En Papillote refers to a French cooking method in which food is placed in individual parchment paper packets that puff up during baking. Aluminum foil can be substituted if desired. The salmon in this recipe pairs lovely with the salty capers, lemon, and fresh herbs.
I have experimented with other types of fish, seafood, veggies and tofu, you can do so too once you get a hang of baking on parchment. Add a splash of wine, and try it with your favorite herbs, or lemon and capers. Build individual packets when you’re making a meal for a group or you can even set out the ingredients and parchment paper and let everyone build their own dinner.
When you want to impress your dinner guests while minimizing your time in the kitchen, cooking en papillote is the way to go.
Ingredients:
4 8-oz. each salmon fillets
4 t. olive oil
2 lemons, thinly sliced
½ c. fresh parsley, roughly chopped
½ c. fresh basil, roughly chopped
½ c. fresh dill, roughly chopped
3-4 T. capers, to taste
Sea salt and black pepper, to taste
Directions:
1. Preheat the oven to 400˚ F.
2. Cut 4 squares of parchment paper and lay one salmon fillet in the middle of each piece of parchment.
3. Drizzle each piece of salmon with one teaspoon of olive oil and season with salt and pepper to taste.
4. Place a few lemon slices on top of each filet.
5. Add one-fourth of each of the herbs and capers to each piece of salmon.
6. Fold each parchment piece on top of itself so it forms a packet, making sure the edges are tightly sealed
7. Place the parchment packets on a large baking sheet.
8. Place the salmon in the preheated oven and roast until the salmon is flakey and opaque, approximately 15-20 minutes.
9. Serve immediately and enjoy!
