As for me, I can have a chia seed pudding any time of the day. They are quick and extremely to make as it requires only a few ingredients and you can make a big batch on weekends for a grab-and-go breakfast throughout the week.
These little seeds pack a lot of power. Just two tablespoons of chia seeds contain 11g of fiber and 4g of protein. They also contain 9g of fat and out of that 5g is Omega 3.
Chia is a great choice if you are on Keto, Paleo, or any other fitness diet. It is full of antioxidants, rich in protein, fiber, calcium, amino acids, and unsaturated fats.
This recipe is more of a method than a true recipe. You can customize it as desired.
Ingredients:
- 3/4 c. plant-based milk, such as coconut, almond or a mixture of oat & coconut
- 2 T. chia seeds
- Vanilla stevia drops, or preferred sweetener, to taste
- Fresh berries and mint to taste, as desired (or alternatively, nuts & cinnamon, to taste)
Directions:
1. Mix chia seeds with chosen milk, stirring well.
2. Cover and refrigerate overnight.
3. When ready to serve, add sweetener to taste and desired toppings.
4. Enjoy!
