And when Zoe got home from work, she had a frozen pizza. Tuesday We had too many leftovers in the fridge (happens in a jiffy with just two people!), Wednesday I took some leftover ravioli out of the fridge, made an eyeballed Alfredo-style sauce, added in chopped kale, and mixed it all with the ravioli. Zoe fended for herself. ?

This is better than endless nights of eating out, but definitely not as frugal as an organized trip to Aldi. Sunday Leftover sandwiches; they’re great reheated in the toaster oven on the air-fryer setting. Monday I had a snacky dinner earlier, and then when Zoe came home from her evening shift at work, she had a frozen pizza.

Sunday I remember that Zoe ate a frozen French bread pizza. To back up: Zoe wasn’t feeling well, so I offered to bake a frozen pizza for her. So that’s when I switched to the French bread pizza for Zoe. Friday We have some leftover chicken, so maybe I’ll do something with that for dinner.

Here is a photo of the miniature zucchini pizzas as I put them into the oven. I served them forth using leftover marinara from the pizzas as a dipping sauce! They both turned out tasty! I'm not sure if you can tell, but they are topped with marinara, mozzarella, diced tomatoes and (a few) pepperoni.
