Asparagus White Pizza

1 portion of fresh pizza dough (Your favorite recipe, or a pre made one from the store!)
8 stalks of asparagus trimmed, steamed, and blanched
1 shallot diced
2 garlic cloves chopped
4 tbls. of salted butter
3 tbls. of flour
2 cups of whole milk
2 tsp. of dijon mustard
1 tsp. of garlic salt
fresh cracked black pepper
2 tbls. of parmesan + some to garnish
1 bag of Italian mix cheese
1. Saute shallot and garlic in the butter on medium heat until fragrant.
2. Whisk in flour until combined.
3. Whisk in milk, one cup at a time.
4. Whisk in mustard and stir until thickened to a gravy like consistency.(Add more milk if needed.)
5. Season with salt and pepper and set aside to cool.
6. Preheat oven to 500 f.
7. Warm either a pizza stone or cookie sheet in the oven.
8. Stretch out pizza dough to desired thickness and size.
9. Spread dough on stone or greased cookie sheet.
10. Bake for 5 minutes.
11. Remove slightly baked crust and spread cooled white sauce over pizza. Sprinkle with desired amount of cheese and arrange asparagus over pizza.
12. Return pizza to oven and bake until bubbly and the cheese begins to brown.
13. Top with a little salt, fresh cracked black pepper, and some parmesan cheese. Slice and serve!
