Super simple: I baked a frozen pizza, and Sonia ate some leftovers (since pizza has cheese and she can’t handle cheese). Zoe had dance class so I made a super quick dinner of Swedish pancakes. Leftover batter works well for making more pancakes the next day.

Scrambled Eggs, Toast, Fruit. PB&J, Baby Carrots, Yogurt. Snacky Lunch” – Yogurt, nuts, cheese, fruit, crackers, etc. Chick-fil-A. Dinners: Soy-Glazed Cod Fillets , Broccoli, Rice. Lentil Soup , Portuguese White Bread. Steak, Baked Potatoes, Asparagus. Sausage and Cabbage, Beans, Cornbread.

Blueberry Pancakes. Leftover Chicken Noodle Soup. Hamburger Pizza. Chicken Wraps using Leftover Marinated Chicken. Leftover Roast, Garlic Mashed Red Potatoes, Steamed Green Beans. Breakfasts: Scrambled Eggs with Cheese, Toast with Homemade Jelly (we’ll eat this most mornings). Scrambled Eggs, Bacon, Fresh Fruit. Eggs in a Nest (my current favorite food!). PB&J, Sliced Carrots, Yogurt, Fruit. Grilled Chicken Salad. Turkey & Cheese Sandwiches, Chips, Fresh Fruit.

Whole Wheat Chocolate Chip Oatmeal Pancakes (I made about 50 of these for the freezer recently). Lunches: Leftovers. Pizza. Homemade Pizza, Salad. Thanks to my Freezer Cooking Week , I have quite a few meals in my freezer right now. I will be planning to eat one or two per week and will be continuing to swap one meal per week with friends. We also purchased a 40 lb case of chicken from Zaycon Foods so we’ll be processing all of that for the freezer this week.

Designate one night a week as “raid the fridge’ night to get rid of leftovers. Everyone’s plate might look different, but you’ll at least use up the leftovers and reduce the waste. If you don’t think the food in the fridge will be eaten before it goes bad, place leftovers in a freezer container, label, and store in the freezer. The freezer can be an important tool to saving money at the grocery store and it’s not just for saving leftovers.

Date Night - Frozen Kashi Pizza for Kids Homemade Macaroni & Cheese w/Grilled Chicken Breasts & Steamed Broccoli My Son's 5th Birthday! This is a special week in our family. My youngest child is turning 5 years old! So, in celebration of his birthday, I'm making my first homemade cake for him (with whole wheat flour - yikes!), and hoping dearly that it turns out as delicious as it looks. Am I the only one who hates cooking in the summer? The thought of heating up the kitchen by turning on the oven when it’s already over 100 degrees outside makes it really hard for me to motivate myself to cook.
