Italian Baked Eggs With Spinach & Tomatoes

I just threw them right in the oven while the eggs cooked, but that’s totally optional. Just toss with a little olive oil, salt and pepper, and roast them in a 500 degree oven for 15 minutes or until lightly charred. Sometimes I turn the oven up to broil in the last few minutes to get some extra color on the tomatoes.
