Last week I had a fully planned-out Menu Plan , and instead decided to take a last minute trip to visit my family. So, we'll be incorporating last week's menu plan for this week. Check out last week's Menu Plan HERE. It was a much needed time away from the routine of everyday.

3 out of 5 family members are not fans of tomatoes or almost any vegetable, so my menu plans try to work around getting veggies into the meals wherever possible - sometimes hidden under a sauce or cut very small for disguise! Salads are about the only safe option not needing disguise, but even then, I see the dressing being poured on.

It's been forever since I've posted a menu plan. Thus, the weekly menu has not been what it ought to be. I notice I tend to desire to eat out more when the menu isn't planned, which in turn causes a higher cost in our food budget. That needs to get nipped in the bud! That needs to get nipped in the bud!

I am trying to get back into the swing of things, and back into menu planning. So, here's my menu plan come back! It helps me to keep myself organized when I know what's for dinner each night. I can take the meat out of the freezer the night before to thaw, and I'm ready to go when dinner time rolls around.

Of course, my favorite recipe is only 4 ingredients. 1 stick butter, 1/2 cup honey, 4 cups rolled oats, unsweetened coconut - add nuts, raisins, craisins, etc.
