Parmesan Crusted Bruschetta Chicken Recipe & Grocery Shopping Time Saving Tips
Everybody is busier than ever these days. It is harder and harder for parents to find time to get everything done and still spend quality time together. School has been back in session for a couple months and the holidays will soon be here, YIKES! Family mealtime (turn off those cell phones and other devices!!) is a great way to spend quality time with your kids, get caught up on everybody’s busy life and share a satisfying and nutritious meal. We all need to eat, so lets slow down, enjoy our food and catch-up with our family.
Here are a few ways to help make time for a family meal:
1. Find quick, tasty, kid friendly meals and add them to your dinner rotation.
2. Keep pantry staples like Hellmann’s Mayonnaise, Country Crock and Knorr sides on hand so you can whip up a quick meal anytime.
3. Plan your meals before you grocery shop and make a grocery list!
4. Plan meals around items you already have on hand and what is on sale at the store that week.
5. Don’t be afraid to take a little help from the grocery store with pre-chopped or prepared ingredients. You may pay a little more but if it helps you get dinner on the table it is worth it. An alternative is to bring home your ingredients and do all of your chopping on the weekend for the week ahead.
6. Find grocery stores that allow you to order online and pick-up. This is a HUGE time saver.
My local Walmart just started offering online ordering and grocery pick up. I love this option. I work on my grocery list at lunch then log into Walmart Grocery on my laptop. I order my groceries online and get same day pickup. The Walmart employee will even load the groceries into your car! Yea!! Yesterday I picked up some of my family favorite Unilever items–always perfect for quick and tasty meals. I needed some Hellmann’s (and Knorr Pasta Sides and broccoli for sides) for a tasty Parmesan Crusted Bruschetta Chicken recipe I found online at the Hellmann’s website.
This recipe couldn’t be simpler. It is just boneless chicken breasts, Hellmann’s, bread crumbs (used panko), Parmesan cheese, Italian seasoning, and some bruschetta, The original recipe calls for the olive oil Hellmann’s but my Walmart was out of stock, so I used regular Hellmann’s.
I lined a baking sheet with aluminum foil and sprayed lightly with olive oil for easy cleanup (another tip! less dishes if you line your baking dish.) Mix the Hellmann’s with the Parmesan cheese and spread over the top of the chicken. Sprinkle the breadcrumbs then Italian seasoning on top. I added a little more Parmesan cheese too, because I love cheese!
The recipe calls for baking at 425 degrees for 20 minutes. My chicken breasts were huge! So mine took about 40 minutes. If your chicken needs its own zip code too, adjust your cooking time accordingly. I made some Knorr Pasta Sides garlic shells and steamed broccoli as my side dishes. The original recipe gives instructions to make your own bruschetta but I hate chopping things and it takes forever, so I used pre-made bruschetta I picked up at Walmart. It saved me a ton of time and I have a lot leftover to use in other dishes this week.
This was the first time I made this recipe and let me tell you the chicken was awesome. It was flavorful, tender and very juicy! I may need to try using Hellmann’s as a coating on my proteins more often. I hope my time saving tips help you get a home cooked meal on the dinner table in less time. Make sure you check to see if your local Walmart offers grocery pickup. It is such a help to busy families. Parmesan Crusted Bruschetta Chicken Recipe
Ingredients
- 1/3 cup Hellmann’s® or Best Foods® Mayonnaise Dressing with Olive Oil
- 3 Tbsp. grated Parmesan cheese
- 4 boneless, skinless chicken breast halves (about 1 lb.)
- 4 tsp. plain dry bread crumbs
- 1 Tbsp. Italian seasoning
- 2 medium tomatoes, seeded and chopped
- 1/4 cup chopped red onion
- 1/4 cup Italian dressing
Instructions
- Preheat oven to 425°.
- Combine Hellmann’s® or Best Foods® Mayonnaise Dressing with Olive Oil with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with Mayonnaise Dressing mixture, then sprinkle with bread crumbs and Italian seasoning.
- Bake 20 minutes or until chicken is thoroughly cooked.
- Meanwhile, combine remaining ingredients in medium bowl. Evenly top chicken with bruschetta mixture.
