Mealtime Magic - Kick Off Your Party with These Super Snacks (and Cash Back)

Mini Corn Dog Muffins: Super easy! Just whip up your favorite corn bread muffin mix (or use a boxed one), fill mini muffin tins, and place a chunk of hot dog in the middle (one hot dog can be sliced into 5 or 6 pieces). Bake as usual and serve with ketchup and mustard for dipping. 


Layered Nachos: Here’s the best way to make sure every tortilla chips gets a little love—use a large casserole dish and layer your nachos. Start with the chips, then add your choice of beans, meat and cheese. Repeat that layer. And again. Create as many layers as desired (and be liberal with shredded cheese, it tends to “cook away” when you bake the nachos).


Bake your nachos in a 400-degree over for about 20 minutes and serve hot along with a selection of cold toppings including olives, jalapenos, sour cream, guacamole, tomatoes and salsa.


Sweet and Sour Meatballs: Got a busy weekend? This is a crowd-pleaser and super quick to put together. Use a bag of frozen meatballs and place them in a slow cooker with 9 oz. of grape jelly and a 12-oz. bottle of chili sauce. Let them cook on low all day in the sauce and by game time they’ll be ready to much on.


Football Pepperoni Pizza: Make a cheese pizza as you normally would—you can even use your favorite frozen variety. Top with pepperoni slices, overlapping them slightly and creating the shape of a football in the middle of the pie. Form the football laces on your “pepperoni football” with mozzarella sticks. Bake according to directions. 

 

and for fans with a sweet tooth:

Super Snickers Popcorn 

4 quarts popcorn (about 1 cup kernels)

1 cup salted peanuts

1 cup salted butter

2 cups light brown sugar, packed

1 tsp salt

1/2 cup light corn syrup

1 tsp baking soda

30 fun size Snickers bars, chopped

3 oz melted chocolate chips

 

·      Preheat oven to 200 degrees.

·      Pop your popcorn and mix it with peanuts in a big brown paper grocery bag.

·      Over medium heat, lightly boil butter, brown sugar, salt and corn syrup for 5 minutes (stirring constantly). Remove from heat and stir in baking soda. Pour over popcorn in the brown paper bag, roll closed and shake well. After the popcorn is coated, spread onto a cookie sheet. Top with chopped Snickers and put in oven for 5 minutes. Remove from oven and drizzle melted chocolate over top of popcorn. Let cool.
