It takes about 45 minutes in the oven. Discard the seeds ( in your compost ) or roast them like you would pumpkin seeds. Place the squash halves cut-side down in a baking dish. Cook 45 minutes in a 375 degree oven. They didn't even flinch; they just gobbled it up like they do when they eat pasta. It was easy-peasy.

Pasta with Fall Squash and Leeks

After roasting, when the squash is cool enough to handle, scoop out and toss the seeds into your trash or compost. Pour the pasta into a 13 X 9 baking dish that has been prepared with cooking spray or butter. Bake for 20 - 30 minutes in a 350 degree oven until the cheese browns. Sprinkle Parmesan cheese on top.

How to Roast Pumpkin Seeds

Instead of throwing the seeds into the compost, I roast them up for a fun snack. Spread the seeds out on a rimmed baking sheet in a single layer. Bake in a 350 degree oven for 15 minutes. Stir the seeds half way through baking. Remove from oven and cool completely. Remove seeds from pumpkin or squash.
