My chicken had a popup thermometer, but you could insert a meat thermometer in the thickest part of the cut of meat without touching the bone to check for doneness. You may use the stock immediately or allow to cool completely and store in the refrigerator overnight. Put the lid on the crock pot and turn on low for 7 - 7 1/2 hours.
