While the oven is preheating, I roll out the dough and then place on an upside down cookie sheet that is covered liberally with cornmeal. I don't have a pizza peel, which is recommended, but the cookie sheet has been working well for me. I don't have a peel and like I stated above, I use an upside down cookie sheet.
