Preheat the oven to 400°F. Place the baking sheet on the middle rack of the oven and bake for 30 minutes or until the internal temperature reaches 135°. Turn the oven up to broil and cook for an additional 5-7 minutes or until the top is nicely browned. Remove the pork from the oven and let it rest for 15 minutes.
