My main goal is to mostly cook at home, and other than that, I’m not stressing for now. Next time I’d cook the chicken, put it to the side, and add it at the very last minute, once the sauce was cooked. My lunch leftovers were at least 25% better than the original dish. we can correct the error.

This week, I made one of my favorite Cook Once, Eat Twice meals: Roasted Pork Tenderloin. This Week’s Dinners: Saturday: Leftover Burrito Bowls from Friday’s dinner. Our sides were various things we found in the fridge: leftover steamed broccoli, applesauce, grapes. It is my favorite cut of pork.

while I went on a girls weekend away with some college friends. Sunday: Dinner was grilled pork chops, fresh strawberries, and any leftover odds & ends in the fridge. Tip #1: I slow cooked 2 bone-in chicken breasts and 2 packs of chicken thighs and used some of the meat for Monday nights dinner. Such a yummy treat.
