Tuesday: We had leftover chicken with pesto sauce from Monday night so I put on top of thin spaghetti. Thursday: Turkey Noodle Soup using the leftover turkey from a few weeks ago. Friday: Burrito Bowls with a Costco rotisserie chicken. Saturday: Leftovers. We’re swimming in leftovers.

Sunday: Chicken Burrito Bowls with leftover Costco rotisserie chicken. We ate it twice and we still have leftovers, so I’m going to put that in the freezer. Thursday: leftovers from Monday and Wednesday nights. Monday: Cajun Red Beans & Rice , garden salad, homemade sugar-free applesauce. We liked this soup.

I am getting better at putting leftovers in the freezer if we don’t eat them before they go bad. Tuesday: I made a ham & pepper skillet frittata with leftover Easter ham and chopped peppers that I had in the freezer. Wednesday: I pulled leftover Cajun Sausage and Red Beans out of the freezer and served over rice.

Friday: I’m going to Costco today for my monthly trip, so I’m picking up a rotisserie chicken, so I decided on Homemade Burrito Bowls tonight.
