If I had to choose one food that I would never want to live without, it would be eggs…or maybe pasta…or dark chocolate. I just threw them right in the oven while the eggs cooked, but that’s totally optional. Sometimes I turn the oven up to broil in the last few minutes to get some extra color on the tomatoes.

He likes Italian food, but he doesn’t love ricotta cheese. So to keep us both happy, I created this recipe using ricotta, but added lots of veggies and meat so that it was hearty enough for him. I like my noodles al-dente, which can be a challenge in baked pasta dishes, but these still had a nice bite and texture to them.
