The pesto would also go well with a round of homemade artisan bread. If you want to freeze the pesto for future use, omit the cheese and place in freezer container. It takes a lot of basil leaves to pack into 2 cups. I mixed this pesto in with some pasta and served with grilled chicken. It was a wonderful summertime meal.

I used pre-cooked shredded chicken that I had in the freezer making it very easy to pull together, but the bulgur wheat does take an hour to cook. This recipe has been in my recipe binder for years and I only recently tried it when I had a lot of cucumbers and grape tomatoes that needed to be eaten.

The leftovers can be stored in the freezer like I suggest below. If you forget to get the turkey out of the freezer in time, you can thaw the turkey in cold water. And if you’re a little tired of leftover turkey, simply chop the turkey and store in 2 cup portions in the freezer for future use.
