Monday An oft-repeated meal of late: I grilled chipotle chicken kebabs and we ate them on a green salad, with the accompanying sauce as a dressing. A simple green salad on the side. Friday I have an evening lab, but there are leftovers here so that’s probably what Zoe will eat after work. Toasted croissants on the side.

In a separate pan, sauteed a sliced green pepper, added some chopped kale, and threw in the last half of a tomato I had (chopped first). Tuesday I sauteed some ham from the freezer, then sauteed some chopped kale, then added in leftover mac and cheese plus some milk and cream. And for myself, I did a very random skillet meal.

I think I might be better off buying a bag of salad greens and then adding my own toppings. Thursday Zoe picked up some fast food for herself after work, and I ate some random stuff from the fridge (leftover pasta and some butternut squash soup , plus a grilled cheese sandwich). Friday I don’t know!

Monday A longggg lecture day for me, and I had leftover chicken. I often start my day with scrambled eggs and a side of greens!) Sunday I pan-sauteed some chicken thighs, shredded them, and we ate the meat on buns, with barbecue sauce. Fruit salad and chips on the side. Tuesday I pulled out a frozen pizza and that was our dinner.

Grilled Organic Chicken Breasts w/ Chinese Spaghetti & Green Beans Ground Organic Turkey & Rice w/Steamed Broccoli w/Cheese Blueberry Pancakes - I substitute whole wheat flour for white flour and make it exactly the same otherwise.

What I Spent This week I stopped in at Lidl and I bought a pretty large container of greens. And I am proud to say that I have single-handedly eaten almost the entire container, largely by eating a bowl of greens with my breakfast. Tuesday I used leftover chicken to make half of this chicken and biscuits recipe.
