Baking is usually not my thing, but this is the one time of year I actually enjoy it. Everyone in my family has different tastes. I like Fuji, Gala or Honeycrisp, which are sweet but still nice and crunchy, and the rest of my family prefers Granny Smith, which are more tart. No one in my family loves cooked apples by themselves.

The first time I made these potatoes for my sister she was amazed, and her family gobbled up a huge pan of them. She had never thought to bake mini potatoes, which seems obvious since we bake regular potatoes. I assemble everything right on the baking sheet and can have it in the oven in about 5 minutes.
