She had never thought to bake mini potatoes, which seems obvious since we bake regular potatoes. I assemble everything right on the baking sheet and can have it in the oven in about 5 minutes. You can find the mini potatoes at most grocery stores, but we like the Potato Medley at Trader Joe’s. Ingredients.

I spent an early morning (before day-break, to avoid turning the oven on during the heat of the day) stocking my freezer with home-baked coconut muffins (gluten and sugar free).
