I take a collection of different types of beans and lentils, mix them nicely in a big bowl and then package them in pretty vintage or recycled jars. I've also used the taco seasoning mix I buy in bulk at Costco for this gift, in a pinch.

We include breakfasts, lunches, dinners and snacks in our planning. My mom and I are each responsible for 2 dinners. We usually plan for one night to be ‘clean out the fridge’ night and we allow for 3 dinners out. We both freeze our dinners at home and they hold up well in the coolers on our trip.

Our beach condo has a grill so I usually grill chicken or burgers for my dinner night. Thank goodness our rental has recycling containers. We will be gone for 7 days.
