I still had chopped cooked turkey and homemade stock leftovers in the freezer from Thanksgiving. Friday: I’m going to Costco today for my monthly trip, so I’m picking up a rotisserie chicken, so I decided on Homemade Burrito Bowls tonight. I served with avocados and salsa. My most favorite dinner!

With your kids in school, there’s no telling what hurdles you’ll have to face come dinnertime. Roll into burrito-sized tortillas and serve with sour cream. I loved the fried rice and the broccoli and cheese rice the best but every variety we tried was delicious. The veggies in the fried rice were tender and it was very flavorful!
