Sunday: Freezer leftovers. I’ve become more diligent about putting uneaten leftovers in the freezer. Wednesday: My oldest daughter requested a Tomato soup & Grilled Cheese night, so I went to Pinterest for a recipe. Thursday: I had leftover soup and I made tortellini with sauce for the kids.

My daughter even ate the leftovers for breakfast. Cook orzo according to package directions. These muffins make a hearty lunch or snack. In the final two minutes, add the broccoli to the pasta water to cook. In a large bowl, combine the orzo, broccoli, chicken, onion, salt, cheese, parsley, and eggs. Stir well to combine.

My daughter and I love meatless meals…especially any kind of pasta/veggie combination! 1 – Cook 1 box orzo pasta as directed (we like to cook our pasta about 2 minutes less than what the package says…no mushy pasta!!). This is also a great way to use leftover veggies! Drain, rinse well and set aside.
