For convenience, I frequently serve steamed vegetables and my homemade sugar-free applesauce as side dishes and you will see it often in our menu. I also made smashed potatoes and gravy, steamed broccoli, and homemade applesauce. Tuesday: I used the leftover chicken from Monday night and made Chicken & Black Bean Enchiladas.

I had planned some yummy dinners, but as the week progressed, and the crazy life that we live happened, we didn't end up eating much homemade prepared meals. AND, we only ate once in the week out on Father's Day. Looking back, I can't even remember what we ate. but I know we ate! One can't plan TOO much!
