As you all know, I typically do my grocery shopping on Thursdays, therefore, that is also the day that I plan my weekly menu. For my menu planning, I start by scouring my freezer, fridge, and pantry to see what I have on-hand already. Last week, our menu plan seemed to go out the window.

I had something called a mango pancake, which is sort of a weird name for what it is: fresh mango and whipped cream rolled up in a mango wrapper. I think the wrapper is sorta like a crepe, so that’s probably why it’s called a mango pancake. We got some frozen pizzas. Tuesday So green!

Saturday I made whole wheat blueberry pancakes because I had been craving them, but my morning had been too rushed to do something like pancakes. I love blueberry pancakes! Monday I had a free frozen pizza from Safeway sitting in my chest freezer, so that’s what we ate!

I find menu planning to be very helpful, but I also find it hard to get my act together and actually plan the menu. Since I'm off for the summer, I'm hoping to find some easy and healthy dinners my family will eat.
